Additional Details: I am concerned about developing sensitivities to the few remaining foods that are the least reactive. Would there be any wisdom in trying to expand beyond proteins and non-starchy vegetables, or would those starchier foods (like sprouted quinoa, butternut squash, and sprouted sunflower or pumpkin seeds) definitely not work or be a bad idea in this case? Any other foods to try? I am pursuing testing to find out what is going on inside, but looking for any helpful strategies in the meantime!

You need to eat, and I'd like to see your diet be rounded out more. Have you done the salt flushes and closing of the ileocecal valve? Those will both be important to you, as well as to not introduce probiotics or starch until the bloating is a bit better. Keep taking orthodigestzyme. Try butternut squash and soaked pumpkin and sunflower seeds first, then sprouted quinoa. One new food at a time.
